The brief
A small Zeeland producer harvests salt and seaweed from the Eastern Scheldt. Loved locally, it looked like a souvenir next to French and Spanish salts on export shelves.
Chefs choose salt by where it comes from. The old pack hid the sea.
Measure: research
We cooked with chefs in Paris and Munich and read the menus of restaurants that name their suppliers. Origin sold the salt; the story of the tide was missing.

From souvenir to source: Noordzout is the North Sea, measured by the tide. Every product states where and when it was harvested.
